We're Expecting!

I haven't baked anything in a long time - I think since the holidays. But leave it to me to promise my 8 year old niece (and God daughter) that I'll bake her cake pops for her communion the same week I have to travel to Ohio for work. I literally picked up the phone, called her and said "Bells, what do you want titi Pepi to bake you for your communion?" and in her cutest voice ever she said, "Do you remember those cake pops that you made me for my birthday a few years ago? Can you make me those again? They were yummy!". First off, I can't handle a compliment of my cooking (I don't get them often - even from 8 year-olds) ... so of course I said, "Of course I remember, I'll make anything for you!".

I like to think that I work well under pressure... but I definitely don't bake well under pressure. Needless to say, it's Monday morning and I'm baking cake pops. This is a three step process (cake pops on Monday, freeze the pops during the week while I travel for work, then dip the pops on Friday night when I get home).

It's been a little hectic busy around my house for the last several months. When I got back from my New York work trip in January, the same night that I arrived from my week away.. we found out that we were expecting! It has been a wonderful journey. Last fall after I ran the Chicago Marathon, Brad and I decided that we were ready to start a family. It really didn't take long for us to find out that we were going from a family of 5 - Brad, myself, Hemi (little dog), Toby (big dog) and Starr (cat that thinks he's a dog) - to a family of 6, which will not include another pet... but a little Ganey baby (like a real baby that will eventually speak and not bark or meow)! Here is our 12 week sonogram:

Since January, we've re-painted the living room, the kitchen, most some of the doors and door frames, re-built the porch railling and also laid all new laminate throughout the main living floor. Here is a photo of our progress:
You can probably assume that I've gone a little home-remodeling crazy in preparation for our bundle of joy... who will be joining us in September 2015. But, we already had all of these changes in mind, baby #1 just helped us speed up the process. It's not to say that I haven't been cooking dinner (tasty dinners shall I add), and taking photos! So, you'd think that I'd want to share my dinner cooking experiences on the blog but I really just haven't had the energy or motivation to write. But, here are a few photos of my dinners:

I like the idea of quick and yummy recipes, but I think I am too frugal for the actual delivery service of the ingredients. Plus, I only live 0.5 miles from Publix where I can pick them up myself on my lunch break. Regardless, the dish was delicious!

Berry Pie Pops

I retract what I said earlier about not baking anything since the holidays! In March I took a 2-day trip to Ohio for work. When I returned home, Brad had bought me a flat of strawberries on his way home from work in Plant City. Only, I needed to figure out what to do with them all. So, one of the yummy things I baked were these yummy pie pops (that tasted better fresh than left over) and I borrowed the recipe from I took some over to my niece and nephew in Lake Mary and they ate-them-up!
